Stone-walled cellars in the Auvergne breathe at a steady 11°C. Wheels rest on spruce shelves for months, sometimes years — turned by hand, brushed by hand, listened to.

Five generations of affineurs have refined the same gestures. A brush of brine, a press of the thumb, a tilt of the ear: the cheese tells them when it is ready.
